Ginger Scones


  •  2 cups Spelt Flour (Whole wheat flour will work as well)
  • 1/3 cup Sugar
  • 1 T Baking Powder
  • ½ t Salt
  • 1 t Ground ginger
  • 1 t Cinnamon
  • 1/4 t Nutmeg
  • ½ cup Finely Minced Crystallized Ginger
  • 1-1/4 cups Heavy Cream


Preheat oven to 415°

Mix dry ingredients together.

Add heavy cream to flour mix. Mix with a wooden spoon and hands; you may need a bit more cream.

Use a scant 1/4 cup of dough and form into a biscuit shape.

Bake about 15 minutes.

Makes 12-16 scones

    Sounds good. How much heavy cream is used? Just till the dry mix balls up or a set amount?

      1-1/4 cups of heavy cream. I’ve fixed the recipe in the post.
